Sprouts Comes to Town


Sprouts Grocery Store opened here yesterday and I couldn't resist a trip to check it out.  Though it was extremely crowded the prices and quality of the produce were worth the crowds.  I picked up a pineapple for $1, and 3 mangos for $1 all to make a fresh Mango Pineapple Salsa for dinner. 

 First I chopped up some fresh mango and pineapple


Then added some cilantro




I typically prefer to add red onion but only had white onion on hand


and last but not least a squeeze of fresh lime and a dash of sea salt

And here it is

Perfect pair for any white fish and some coconut rice!

Mango yogurt pops


I recently purchased these popsicle molds from Ikea for $1.50.  The girls and I had a go at our first recipe from Pinterest. The recipe follows the pics.






I halved the recipe and added 1 tablespoon of honey to the mix.  I loved the taste of them as did my 7 year old.  However they were not sweet enough for my 4 year old.

Ingredients
  • For the Mango and Yogurt Ice Pops:
  • 2 cups Greek style natural yogurt
  • 2 large ripe mangoes, flesh only
  • 1 small can (165ml) coconut milk
  • 1 tsp cinnamon
Instructions
To make the Ice Pops:
  1. Place all ingredients in a blender and whizz until smooth.
  2. Pour into your ice pop moulds, stick a paddle pop stick in and freeze for at least 3 hours, or until set.
